For easy clean-up, use parchment paper to line the cookie sheets or wire racks.
For best results, allow cookie sheet to cool completely between batches.
Instructions:
Preheat oven to 350°F (325°F for dark or nonstick cookie sheet).
Beat sugar and softened butter in a medium bowl with an electric mixer on medium speed for 2 to 3 minutes, until light and fluffy.
Mix in egg and almond extract on low speed until blended.
Slowly mix in flour mixture until dough forms, stopping mixer to scrape sides and bottom as you go.
Shape dough into balls about 1 tbsp in size.
Pour sprinkles into a small bowl. Roll top 2/3 of each dough ball in sprinkles, coating well. Leave the bottom of each dough ball without sprinkles. Discard excess sprinkles.
Place balls 3 inches apart, sprinkle-side up on cookie sheet.
Bake 9 to 11 minutes, or until edges are golden. Let cool 1 minute.
Transfer to wire rack, and let cool completely.
